The largest size that I would recommend is a 235X75X15. I put this size on my 95 GC Limited and had to shave slightly in the front wheel well to prevent rubbing and this was with new shocks. The 265X75X16 is over two inches larger in diameter and will definitely rub without a budget lift at least.
You can Google "tire size calculator" and find some great sites that will give you comparisons in width, diameter etc of different size tires.

Yes they will fit but if you crank the steering all the way you rub a little depending on the tire tread.

Jeep did not make a Cherokee Laredo, they did make a grand Cherokee Laredo, and you can fit 31 inch tires.

Stock tires and no lift 15mpg in town and 17mpg on the highway.
Depends entirely n how big of tires you want to mount and how much you want to spend. You can squeeze 29" tires under a stock Grand Cherokee and then you go up from there. You get what you pay for when you buy a lift, a cheap lift will handle poorly and can be unsafe.
I put them on my 95 JGC 4x4 stock but they will rub when you turn. I put 2" spring spacers on mine and that took care of the problem.
