You can freeze most anything but usually the question is: should you. I assume you are asking about fried potatoes. I would let them cool first so as to limit water crystals forming from steam but as long as they are in a sealed bag or container with the excess air out, sure. I would not keep more than a few months, but that is more flavor related.
