Jiffy mixes only take one egg, but if you make two boxes you can use two eggs. If you use more than one egg when a recipe calls for a single egg, it will just make the cupcake a little on the heavy side, The cupcake will still be edible. When baking, it requires careful measurement of all the ingredients for success and best results.

It might be that you attempted to make vegan cupcakes from a regular mix or recipe calling for eggs. The eggs provide leavening (rise) and structure to the batter as it bakes. A very simple way to make cupcakes is to buy cake mix @ your local grocery store and to just fill your "cupcake pan" with it. Although, even the cake mix you have to buy requires a few eggs & maybe some other small ingredients like milk. Look for recipes online if you actually want to make "homeade" cupcakes
