An antifreeze and ( preferably ) distilled water mix is best . The antifreeze provides

corrosion protection until the corrosion package " wears out "

and a mixture ( 50 / 50 ) raises the boiling point of the coolant

You need the corrosion protection and water pump lubricants in the antifreeze. Plus, most modern cars run the radiator fans when the temp gets near 220 deg. If you do not have 50/50 water and coolant it could boil over.
