You could, but the taste is going to be extremely different: not only does balsamic vinegar have a very distinctive flavour but it is also a lot less aggressive to the taste.

If the purpose of the vinegar is to provide an activating acid for baking soda in a biscuit or muffin recipe, then you can substitute any vinegar or acid you like, provided it is edible.

In other recipes, such as sauces and salads, all you will do is slightly change the flavor by substituting one vinegar for another, for instance, balsamic, wine, malt, cider or white.
