Yes, but you have to first mix the evaporated milk with water (half evaporated milk and half water), then add 1 teaspoon vinegar or lemon juice for each cup of the diluted evaporated milk. The acidity of the vinegar or lemon juice will give results very similar to that of buttermilk.

You can also use whole milk in the same way as a substitution for buttermilk, being sure to add the vinegar or lemon juice.

Can you use evaporated milk instead of regular milk in hamburger helper?

Evaporated milk doesn't have any added sugar - that's condensed milk. Evaporated milk is just milk that's had most of the water removed (ie, evaporated out by heating). So, whilst it will taste sweeter than ordinary milk, it's because it's more 'concentrated', not because it's had any sugar added. When mixed with an equal amount of water, evaporated milk can be substituted for fresh milk in baking or other recipes.

When it calls for milk and I want to use evaporated milk do I use the same amount?

Yes. Just don't substitute "evaporated milk" as it contains a higher sugar content. I often substitute evaporated milk by first mixing the evaporated milk with COLD water (it works better) and then adding the required amount into the recipe. Happy dining!

Can buttermilk be a substitute for whole milk?

Yes, it depends on what you're making, however because buttermilk is acidic it is generally used in recipes to control the leavening/rising process. A straight substitute of milk is less acidic and will result in overly fluffy pancakes, etc... You can sour regular milk by adding 1 T lemon juice to 1 c milk and let stand for about 5 minutes. You can also substitute plain yogurt. It depends on what you're making but, for baking, buttermilk can generally be subsituted for whole milk.

Substitute for butter milk that is casein free?

If you are referring to evaporated milk you can use a thick mixture of powdered milk (half powder, half water), or you can use condensed milk, but it will contain sugar. I have also used powdered coffee whitener (Coffee-Mate).
