Vanilla extract will be fine if that's all you have. If you have an almond-flavour liqueur, like Amaretto, you can use that. Or get creative with other nut flavours, like Frangelico (hazelnut).You can also add finely ground almonds if you feel they will fit in with the texture of your recipe.

I had the same question and didn't find an answer so I just guessed. I'm making mint chocolate chip gelato and the recipe calls for 2 cups of mint. I have peppermint extract on hand so I substituted 2 tsp of extract . I think it turned out good for my taste.

butter extract is a flavoring, you can use other flavorings like lemon, almond , mint etc. but your recipe will TASTE different

None they are two different things. Lemon extract is a juice texture and lemon zest is basically grated lemon skin. So if you are making something and you don't have any lemon extract and you replace it with lemon zest, well........ HAPPY EATING :|
Dried mint should have a more intense flavour than fresh. Steeping dried mint 4 minutes should result in a good flavour, if it does not the mint is old and should be replaced. Fresh mint leaves should be steeped approximately 6-7 minutes and remember to use much more mint. (4 times as much fresh to dried)
Butter is not a substitute for butter extract. Butter extract is a fat-free flavoring used when for some reason butter cannot be used. When butter is used, it should replace the fat in the recipe - shortening, oil or lard - and the butter extract will not be needed.
