Mercator projection maps show both latitude and longitude lines being parallel from each other, respectively (latitude lines being parallel to each other, etc). In other words, mercator maps are shown in grid form (looking like paper was wrapped around the globe in cylindric form and copied down)

Conic projection maps show the globe being viewed from "outer space", like a paper was formed into a cone and the tip would be where you're looking down at the world. In other words, conic projection maps show the world from a bird's eye view.

The Mercator projection was created by wrapping a tall sheet of paper around the circumference of an illuminated globe of the Earth. The edges of the countries were traced on the paper. The problem is that objects further away from the equator were more stretched North-South, making them look larger (You may have seen maps on which Greenland looks as big as Africa). The benefit is that the map fits on a rectangular sheet and the lines of latitude and longitude are straight.

Equal area projections use a mathematical equation to correct for this distortion, so the landmasses are proportionately equal in area. Depending on the equation used, the map can be rectangular or a number of weird shapes.

The surface of the earth is curved because the earth is basically (though not perfectly) spherical. Most maps are flat. A spherical map would have more or less the same geometry as an orange peel. If you try to press an orange peel flat onto a table, the peel tears. In order to represent information that derives from a spherical geometry in a planar mode, it is necessary to transform the information in some regular way. This transformation is called projection, because we imagine lines from the sphere being "projected" onto a plane. If you imagine a glass globe that has a strong light in it, the images or shadows made on nearby walls when the light is turned on would be a map projections. The "light-in-the-globe" method is only one way to project a map. The essential difference between projections is the geometry, but the question of which angle to view the earth from (that is, where to locate the map's center--north pole? North America? Pacific Ocean?) is also important.
