If by "big chunks of ice" you mean millions of square miles of ice over a mile thick, bordered by millions of square miles of tundra. Yes, that is why they were so named.
Most of them do... the friction of the atmosphere heats them to the point that they melt. Only the larger 'chunks' fail to evaporate completely.
In most recipes pineapple chunks can be a suitable substitute for crushed pineapple. If the chunks are too big you could put them in a blender or cut them into smaller pieces.
