Not as such, Gluten is a protein that is found in wheat and spelt. BUT yeast (a fungus) is frequently cultured in sugar solutions made from wheat and may therefore be contaminated with Gluten from the wheat.

Baking powder is used in cakes since it is relatively 'taste free' and a quick/easy to use leavener. But baking powder is rarely used in breads - yeast is used as the primary leavener in breadmaking. (Yeast is what gives bread it's bread taste plus irregular air bubbles).

Alcoholic fermentation. Bread dough which has risen contains (a very small amount of) ethanol in addition to the carbon dioxide which is what actually makes it "rise". Most of the ethanol cooks out during the baking process.
