Cats [do] see gender in humans, but that does not make much of a difference to a cat. They respond to our body language and tone of voice, and react from there. Only cats who have been abused or had some kind of trauma in their life might respond with automatic dislike for some males or females. Even so, it may only be certain kinds of women or men (like men with dark-colored beards, or women who wear hats, for example). Animals who have been continuously mistreated do this because they associate men or women that have the certain traits with discomfort.
For example, lets say there is a man with a dark colored beard and he always wears hats. This man beats his cat every single day. The cat, who is now traumatised, might never be able to trust any man with a dark colored beard and wears hats, even if the two men look nothing alike other than those two traits.
