Does the night cause them to ripen? No. But the night allows will create conditions that allow them to mature. Some plants require specific amounts of light during the day to flower and grow. Tomatoes produce flowers and fruits regardless of day length. While tomatoes typically produce larger yields with more light, there are limits to this; even when grown indoors using artificial lighting systems, tomatoes require some periods of darkness to produce quality fruit and release oxygen. While energy is actually produced in the presence of light, during the dark cycle the plants take in carbon dioxide through specialized structures on the bottoms of their leaves and release oxygen into the surrounding air.

However, it is not the night that causes Tomatoes to ripen, it is the temperature and conditions. Cool, dry, dark conditions just prevent mold other unwanted growths from developing. . Cooler temperatures, from 50-60ºF (10-18ºC), will cause tomatoes to ripen more slowly. Higher temperatures, from 60-65ºF (15-18ºC), will cause more rapid ripening. Make sure that the tomatoes don’t reach a temperature under 50ºF, or they may go soft and never turn red. Exposure to ethylene gases also determine how fast or slow a tomato ripens. Ever notice that when there other ripe fruits and veggies you will suddenly have a lot more ripe tomatoes as well? That is the effect of the ethylene gas they emit affecting the tomatoes.
