Sweet potato pies are made by first cooking about 4 medium sized sweet potatoes (I microwave mine till done, then peel them when cool). Next, I use an electric mixer to mash and whip the potatoes till there are no lumps. Then I add about 1/2 to 2/3 cups brown sugar, two eggs, about 1/2 teaspoon cinnamon, 1 tablespoon vanilla extract, 1/2 stick butter and about 1 cup undiluted evaporated milk. Pour into an unbaked pie crust and bake at 350 for about an hour. If the edges of the crust begin to brown too quickly, cover with strips of foil.
