Depends what else you put into it. I would make about 130 pounds of salad from 100 pounds potato as I add eggs, onion, bell peppers etc.
Onion is what goes bad in the potatoe salad because it attracks bacteria. If you use mayo that is home made then that can go bad but the commercial mayo has preservatives in it. If you put an onion out on the counter when someone is sick and let it there over night you will see how it attracks the bacteria.

You can drain the water and let them sit on the counter for about twenty minutes. When they are cool enough to handle you can make the potato salad. If you put them in water the potatoes will absorb more water and get mushy. If you put them in the refrigerator they will be kind of dried out and your potato salad won't be very creamy. I prefer making it with warm potatoes and then refrigerate the potato salad.
