You can run a car without a thermostat. However you will have difficulty with getting heat into the cabin because the engine will run cold. The fuel economy will not be as good, the exhaust emissions will be off (rich) because the engine takes a long time to reach operating temp. The transmission will shift higher because the Transmission Fluid will take more time to warm up.
