Removing the thermostat will most definitely affect the performance of a car. If it's old enough to still have a carb, the engine will always be on the lean side, since the air is more dense, plus the lower temp doesn't atomize the fuel as well. If computer controlled, the ECM sees this as an abnormal condition, and either goes in the limp-home mode, or never allows the engine full power by restricting ignition timing and transmission shifts.
If you suspect the thermostat is no good, replace it with a new one, don't leave it out.

No heat in your car may be from your water pump going out and not feeding your heater core with enough water to produce heat. First remove your thermostat and see if your car stops over heating. If it doesnt, then you need to replace your water pump. Hopefully you havent cracked your heads. If your car doesnt over heat after removing the thermostat, but you still have no heat in the car. Then its your heater core that needs replacing. Always replace your thermostat whenever replacing the water pump.
Front side of the block on the passenger side, below the AC compressor (if your car is so equipped). The lower radiator hose goes to it. It is held on with two bolts and the thermostat will come out with the housing. BE CAREFUL WHEN REMOVING THE THERMOSTAT FROM THE HOUSING! it is on the front of the engine block behind the fan. looking at the car from the front it is to the left of the water pump. there will be a three bolt adapter going from the engine block to the radiator. by removing the three bolts you will find the thermostat there.
