Set yogurt is made by allowing the yogurt mixture to sit undisturbed until it thickens and sets, while stirred yogurt is agitated during the fermentation process to create a smooth and creamy texture. Set yogurt tends to be thicker and denser, while stirred yogurt is smoother and more liquid in consistency.

When people manufacture or make yogurt, they put it water, or other liquids. And when the yogurt sits too long, that certain liquid usually rises.
You can sprinkle it on yogurt but I wouldn't pour in a drink. When taking with yogurt I recommend sprinkling the full dose on a spoon with yogurt on it, then covering it up with a little more yogurt, swallowing (without chewing) and drinking some water after.

Part of it is probably due to the bacterial fermentation: acid is produced, which clots the milk just like if you let it go sour. The proteins start clinging to each other and also absorb more water. However, I find commercial yogurt is also heated, further denaturing the proteins and making the product more thick than home-made yogurt ever gets.
There is no chemical formula for a mixture. Water has a chemical formula, soft drink, milk, yogurt, wood does not. Rust has a chemical formula, however, yogurt, ice cream, pancakes have a recipe - no chemical formula. It is a mixture, not a compound

Greenk yogurt is just regular yogurt that has had a good deal of the water drained from it. This makes is thicker and creamier. You can do the same thing yourself. Just buy regular yogurt, place a paper towel in a strainer and put the yogurt in the paper towel. Put the strainer over a bowl and cover with plastic wrap. Leave it in the fridge overnight and in the morning you'll have nice thick yogurt and the liquid drained off will be in the bowl.
250 g of yogurt would yield the same amount in milliliters. Yogurt is usually packaged in pots or tubs and measured in ml.
