Hello I have a 1995 S10 pickup it's a 2.2L 4 speed auto and the check engine light comes and and off once in a while what could this mean?

Most of the time when it comes on and off its something with the air mixture or the exhaust gas. Could mean the O2 sensor is bad or you need a tune up. Possibly the air filter is just dirty. Most other issues cause the light to come on and stay on until you restart the car.
