Most proteins including enzymes are very sensitive to heat. When heated it will break the bonds that give the protein its shape. The protein only functions because of its shape. So when we heat a protein/enzyme, it changes its shape and it no longer functions. This process is called denaturation.

beta amylase work well at 63-65ºC and alpha amylase work well at 71-73ºC above activity drops and enzyme denaturated.

What happens when you heat up starch and amylase?

Heating up starch and amylase can lead to denaturation of the amylase enzyme, causing it to lose its shape and function. This can result in a decreased ability of amylase to break down starch into smaller sugar molecules.

What will you observe when the isolated beta amylase enzyme is subjected to biuret test?

When the isolated beta amylase enzyme is subjected to the biuret test, you will observe a color change from yellow to blue. This is because the biuret reagent reacts with the peptide bonds in the enzyme, causing a change in color.

What can the enzyme amylase break down?

The enzyme amylase can break down starch to maltose.

What enzyme dissolves starch?
