This is not easy. Trake it for a more powerful car.
If you are not towing anything for sure disengage the overdrive on an A/T. On a manual 5 speed put it in 4th, or 3rd, or 2nd, or even 1st gear depending on how steep the hill is and how fast you want to go.
3 gears you have 1st for hill climbing 2nd for going some what fast and 3rd for going fast like if your going on a straight away use 3rd if you going up a big hill use 1st if your going up a some what steep hill use 2nd or 2nd for going medium speed.
You can shift 3rd to 4th on a steep hill but it is not a good idea because you will loose power/speed and could even start to roll backward and stall the engine. 4th gear is designed for level road driving at higher speeds. 3rd is for stepper hills or getting to sufficient speed so to shift to 4th. 2nd gear is for steeper hills and so on.
You should change down to a lower gear, 3rd gear or if the grade is very steep 2nd gear.
