You most definately unpluged the sensor wire. It's a single red wired that plugs onto a sensor just passed the thermostat.

If you are having an overheating problem check the thermostat and overflow tank pressure cap. There was a retrofit that included a lower pressuer relief cap for the overflow tank BUT the thermostat must also be changed to a lower temperature opening or the engine will overheat.
