It will have a malted scent and a slight tinge to outer edges. It smells bad.
If in doubt, chuck it out. With most meats (minced beef etc) They smell funny or go a funny colour, however with chicken, if it is slightly too old, just throw it away, I have had food poisoning and it is NOT worth it.
