Cats have to scratch for their claws to stay healthy. Introduce them to a cat scratching post. Place the cat's feet on it as you hold the cat in an upright position and rub the feet on the post. Sometimes placing a toy or the scent of cat nip on the post will intice them more. Continue to encourage the cat to use the post. Eventually, it should get the hint.
You don't want the cat to never have something to scratch. Their claws could become abnormally long or twisted and cause them and you problems. If your cat has a particular place he/she likes to scratch, then you could place the post in front of it and after a week or 2 put the post a little bit away from the spot. Continue that and eventually your cat will seek out the post on its own.

Cats just like/need to scratch things, and they might scratch your couches if you don't give them a proper scratching post(by proper, i mean tall enough and stable; scratching, in cats' minds, is stretching :P). If your cat keeps scratching the couch anyway, you can put double-sided tape on the couch. Cats don't like sticky surfaces. Also, you can train cats to not jump on the stove or something and knock over a pot.
I don't think you can declaw cats anymore. Cats have to be before heat, and can be done at 8 weeks minimum.
