It isn't only Jews who believe this- followers of ALL religions do, as well as people who are not attached to organised religion but who retain a generalised spiritual belief. To answer this question properly, one has to go beyond Judaism and examine contemporary theological trends overall, which are beginning to, very gradually, shift away from the idea that the Universe came into being by pure chance and to conclude that there must have been a Creator behind it. This global change in attitude- for I can find no other word for it- is, believe it or not, based upon scientific and mathematical calculation that the odds for order having been created out of chaos by pure chance are so remote- many trillion trillions to one- that the overwhelming probability is that the Universe was created by a higher power. This calculation is based not only upon the way the Universe works as observed by astrophysicists, but also upon the order and encodement of genetics. We are at present standing upon a threshold whereby scientific sceptics is slowly having to admit that their dogma of there being no Creator behind the Universe is questionable. This knowledge that science has it's limits goes back long before our own highly advanced technological era, and has been shared by such brilliant and diverse minds as Plato, Erasmus, Swedenborg, Albert Einstein and the ancient Rabbinical scholars. It is upon this reasoning and wisdom of ancient Jewish teachings- many of which pre-date even the Old Testament- that Jews believe that God created the Universe.

God explicitly stated this to the Israelites (Exodus 20:10). In addition: For the same reason that other peoples had the same (or similar) beliefs. There are Creation-stories all over the world; tens of them if not hundreds. This is because the Creation was a tradition going all the way back and shared by all mankind. (As time passed, most of these stories became infiltrated by idolatry, with a phantasmagoria of warring deities. It is the Torah, in Genesis, which preserves the original.)
