The one method that I usually use is:

Cook the tomatoes (whole, just broken up into smaller pieces, not mashed), keep it in the fridge for a day, remove it then dry it in an open oven over 120C.

Are sun dried tomatoes fattening?

Sun-dried tomatoes, dehydrated, sliced, diced, quartered, blended, pureed, steamed, stewed, or pasted are tomatoes that were whole tomatoes that have become tomatoes of a different consistency. No, tomatoes are definitely not fattening, they are catabolic. The only cases tomatoes would be fattening is if you ADD fat - like deep-frying them (fried green tomatoes), or making tomato chips (brushing sun-dried/dehydrated tomatoes with oil and baking them)...in THAT case it would be fattening because of the oil working its way into the tomatoes. - Maikel Y.

Why don't tomatoes rot when they're sun dried?

In order for a tomato (or any produce) to rot or get moldy, there must be moisture to support the microbes. Sun-dried tomatoes are only produced in hot, arid conditions (much of it in California and the Southwest, as well as Italy and other Mediterranean countries). The initial period out in the sun removes enough moisture that it can dry the rest of the way, past the threshold in which it can rot, over 4-6 days. Sometimes a little salt is added to inhibit mold as well.Keep in mind that many commercial dried tomatoes are actually dried in ovens or dehydrators (like a low-temp convection oven)-- which work almost as well and only takes a few hours.

Can you use tomato paste instead of stewed tomatoes in a recipe?

Stewed tomatoes have more juice and bits of tomato that aren't in the paste. It would change the moisture content and the texture of the dish. I don't think it would work out.
