I wanted to learn how to make this stuff. Ended up finding that out.

There are several kinds of bleaching agents added to flour:

  • chlorine dioxide

  • Calcium peroxide

  • Azodicarbonamide or azobisformamide

  • Atmospheric oxygen causes natural bleaching.

Flour gets its white color from added bleaching agents such as organic peroxides. The bleaching a gens also oxidizes the surfaces of the grains, helping with the development of gluten.
