There are several kinds of bleaching agents added to flour:
chlorine dioxide
Calcium peroxide
Azodicarbonamide or azobisformamide
Atmospheric oxygen causes natural bleaching.
Some is bleached and some is mixed with white flour.
Flour gets its white color from added bleaching agents such as organic peroxides. The bleaching a gens also oxidizes the surfaces of the grains, helping with the development of gluten.
