You will need another person to help you with this unless you have a bleeder. Locate the slave (it is right next to the front engine mount that faces the radiator. You should see a small sprout on the slave pump, ask the other person to press the clutch pedal, with the pedal pressed loosen the sprout until the fluid pressure is released and immediatly retight it again. Repeat this process until the fluid comes out clean and with no air bubbles.

The clutch itself cannot be adjusted in any car that I know of, what is adjustable is the clutch pedal. In 95 Accents you can adjust the pedal height by losening the nut that holds the rod that connects the pedal to the clutch cylinder, then you just have to give it a few turns until the desired pedal height is achieved. Don't forget to re-tighten the nut again and you are done.

There is no switch which will keep it from shifting. Instead, the clutch is not releasing the power of the engine from the transmission. Bleed the clutch.
Remove reservoir cap and pump the clutch pedal until air bubbles rise and pedal feels firm.
You didn't bleed out the air would be my first guess.
