Remove the atch bone and split the leg from the atch bone to the shin, removing the cartilage at the knee, then remove the bottom bone at the ankle. Once the bones are removed you will be left with a flat piece of meat, on each side of the meat there will be a fat piece of meat, split the meat at that point and fold back the fat bit. One butterflied lamb leg...easy peasy

Cooking tools are everything, so be sure your knife is good and sharp. Run the knife the length of the leg (the best you can) and then cut downward into serving pieces. ALWAYS cut at a right angle to the bone, slicing towards it (the idea being that one is slicing across the grain of the meat).
