The easiest and quickest way is by using the Background Color Picker on the floating toolbar.
At the very bottom of the toolbar, there are 2 color squares overlapping each other - the top is the foreground, the bottom is the background. Click on the background and use the eyedropper tool to pick the color you want, or enter the value in the boxes.
You can also set the default background color from the Preferences panel (Edit - Preferences).

Select the Text Tool. Along the top of the screen, right below the main menu, is the options bar for the tool you have selected. It should show you the font type, size, etc. The font color will be shown in the small box near the right side of the screen. To change it, just click in the box then drag the color to your choice and click OK. Any new text will now be that color, or if you already had text highlighted it will be changed to that color. Open the image in Photoshop, Select the Eyedropper tool to pick up the foreground and background color of the logo so that they are set as the foreground and background color in photoshop (white should be foreground) choose 'Image', 'Adjustments' and go to 'Gradient Map...' If the background is not right (not 100% white) then click on the gradient itself and move the white color stop to the middle until the background is 100% white. Click OK and you're done

click on image with eyedroper selected on specific color you want to use, this will place that color as foreground color

To change color mode go to Image > Mode > choose. To change color profile go to Edit >Color Settings, Edit > Assign Profile or Edit > Convert to Profile.

double click on it on layers pallete where are letters Background image and accept,this will convert background layer which is not editable by default to normal layer and then you can edit it
You probably mean how to combine images. There are several ways to do that in Photoshop: open 2 images in Photoshop, convert background layer to normal for image nmb. 2 then drag it into window with image 1. Another way is to use File > Place command to import image from hard drive into document with already open image in Photoshop.
