Highlight the text you want to change, then click the down-arrow next to the 'A' symbol on the menu bar. Choose the colour you want, and the text will change immediately.
You can't change the font colour in Notes or Active Notes, but you can in QuickOffice. You go Options > Format > Font > Font Colour. Here you can change the font colour.

Highlight the paragraph, then edit the font - usually this is located in the "home" section of Word 07 - also, in the same section, there will be colour (text colour and highlight colour), choose change text colour and it should change for you.
