I assume that you are referring to a manual transmission as you said oil and not fluid. On the side of the transmission, 1/2 way up, you should see a fill plug. Remove it and insert your little finger to the first joint. If you touch fluid or it runs out then it is ok. If not then fill to the edge.
I am assuming you have an automatic transmission, because the manual transaxle does not have a filter. It is located under the transmission pan and should cost about $40 plus a new gasket and labor if you have someone do it for you.
im not sure if it is the same for an automatic transmission, but for a manual, it should be under the hood, in the engine bay. when you open the hood, you are standing in front of the engine, look behind the engine, where the engine joins with the transmission, on the left side... that is if you are standing in front of the car, look on the left side of the transmission, there should be a 12 inch dip-stick that goes into the transmission housing. this is where you can check the fluid level, or add fluid. if you change the fluid, you refill the transmission from here as well

On the passenger side of the engine, down almost to the firewall on the side of the transmission. it is a small yellow pull dipstick. also it is mostly covered by various vacuum lines and such
Unfortunatly I dont know the amount but I know you shouldnt put oil in your "auto transmission" you should be useing transmision fluid.
The recommended automatic transmission fluid for a 2000 Subaru Outback Legacy is Subaru ATF HP. This is a proprietary fluid which is sold by local dealerships.
