To cook beet greens to make them tasty, saute them in the skillet and don't add salt (beet greens have 3 times more sodium than spinach). Separate stalks and green leaves. Cut into bite-size pieces, saute with a little olive oil, stalks first for a few minutes, then add the leaves for another 3-4 min. Turn off the heat and drizzle with lemon juice or vinegar. Great nutritious side dish.

This is a great recipe for using beet greens.

Ingredients:

  • 1 pound beet greens
  • 1 strip of chopped bacon -or- a tablespoon of bacon fat
  • 1/4 cup chopped onion
  • 1 large minced garlic clove
  • 3/4 cup of water
  • 1 Tbsp sugar
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 1/6 cup of cider vinegar

Procedure:

  • Wash the greens in cold water. Drain.
  • Cut leaves into 1" pieces, discarding the larger stems. Set aside.
  • Lightly brown the bacon.
  • Add the chopped onions to the bacon and bacon fat.
  • Cook over medium heat 5 to 7 minutes, stirring occassionally, until onions soften and begin to caramelize a bit.
  • Stir in the garlic.
  • Add the water to the hot pan, scraping any particles from the bottom of the pan.
  • Stir in sugar and the optional red pepper.
  • Bring mixture to a boil.
  • Stir in the beet greens.
  • Cover and simmer for 5-15 minutes until the greens are tender.
  • Stir in vinegar.
