No coolant, junk thermostat or blown head gasket.
Pressure test system to find leaks, check thermostat. Just because it's new doesn't mean it works. Buy quality.
To test the thermostat place it in hot water at the temperature stamped on it, and see if it opens. Or take it out completely and put it back together and see if it over heats.
! Warning ! do not cook the engine or you could warp the aluminum head.
