Add more sugar, salt and tomato sauce.
Mixing soy sauce with vinegar will thin the soy sauce, and give the sauce a strong vinegary flavour, (depending on the amount of vinegar used).
I like west Indian style hot sauces more than tabasco - spicy, but more importantly, flavorful and thick instead of thin and vinegary. What kind of US hot sauce should I try? Do you like tabasco better?

The easist fix would be to strain the sauce removing the peppers and onions. The other option would be to add more tomato sauce or a canned sauce to it to dilute the veggies down to a reasonable proportion and freeze or can the remaining unused sauce for use at a later date.

Use some sugar and some chilis.
Take the sauce off the boil and make a well in the middle. The oil will accumulate in that well and can then be soaked up with a slice or two of bread.
Don't put so much honey in the sauce.
