The hood struts (aka lift supports) are shot. There is no tension adjustment. Your local auto parts store will sell you new struts for that vehicle for aprox $25 each. Just replace them and the hood will stay open for you.

on the latch there are two small bolts loosen them and move the latch up then retighten
Usually if you loosen the screws on the latch receiver mounted on the cab edge, the latch can be shifted up/down or front/back.
replace the door hinge pins and bushings. The latches never need adjusting. You can get these at autozone in the red HELP packages most of the time.
Replace any broken parts or adjust latch assembly
Wedge a screwdriver in the front to create tension on hood then pull the hood latch. It should open.
Adjust the stricker whichever way it need to go.
