As far as the temperature guage, check your temperature sensor to make sure it is still working.

Ford had a problem with the connectors i their dashboards and gauges. Try to remove the instrument cluster, then remove and re-attach the connectors several times. It has worked every time on my Econolines.

I my experience with 89 thru 94 it is easier to remove the bed. There are six bolt in the bed and unhook the wiring harness behind the back bumper. This exposes the top of the fuel tank for easy access to install a new fuel pump or a new sending unit.
As I have experienced, the fuel guage sending unit located with the fuel pump in the top of the gas tank must be replaced. The easiest way to get to the tank is to remove the truck bed and there it is. The bed is held on by four bolts and nuts.

One scenario could be that the sending unit for the gauge on the engine is bad. Try to locate it and replace it if it is corroded and check the wiring to it also.
