Cajun and Creole seasonings are a blend of salt, spices and vegetables, all dried.

Cajun seasoning contains red hot pepper, bell pepper, onion, black pepper, parsley, garlic and nutmeg.

Creole seasoning is more or less the same, without the parsley and nutmeg.

Cajun Spice Recipe

2 teaspoons salt

2 teaspoons garlic powder

2 1/2 teaspoons paprika

1 teaspoon ground black pepper

1 teaspoon onion powder

1 teaspoon cayenne pepper

1/4 teaspoon dried oregano

1 1/4 teaspoons dried thyme

1/2 teaspoon red pepper flakes, optional

Mix all ingredients and store in an airtight container. Makes 1/4 cup.
