I usually mix half vinegar and half other liquids, beer and lemon juice and oil being the three I use. A good shot of tomato sauce or ketchup gives it some color. Salt, pepper and garlic are a given. I often add dried or minced onion and perhaps some other herbs, depending on the type of meat.
