How do you make bees wine?

"Bees Wine" refers to sugar-water fermented with a symbiotic, clump-forming culture of yeasts & bacteria. These clumps are about the size of bees & rise & fall busily as they produce carbondioxide, hence their nickname. The "bees" are no longer available under this name BUT I suspect that "water kefir grains" are the very same thing. Using them, I am successfully brewing an old recipe for "Bees Wine" which is as follows -

2oz Demerara Sugar

1tsp Crude Molasses

1 level tsp Ground Ginger

Enough Spring Water to make up to 1pt (Spring Water is best because it is not chlorinated & has minerals which are useful for the "bees")

"Bees"

Mix ingredients in a clean jar. Cover with a clean cloth (or piece of kitchen-roll) secured with an elastic band. Every other day, add 2 rounded teaspoons of demerara sugar. After 8 to 10 days strain off your "Bees Wine", divide the residue into 2 portions of "bees" & use to start 1 batch for yourself & a 2nd batch for a friend (or throw the unwanted half away).

The "wine" actually tastes like a tart, mildly alcoholic ginger ale. To keep the brew sweeter & less acidic, brew for a slightly shorter period.

By the way, water kefir grains are readily available on the internet.
