* 16 ounces bittersweet chocolate, chopped fine * 16 ounces (2 cups) heavy cream Place the chopped chocolate into the bowl of a food processor. Heat the heavy cream in a quart-sized, microwavable container and microwave for 3 to 4 minutes on high, or until it just begins to simmer; be careful not to allow cream to boil over. Pour the cream over the chocolate and let stand for 2 minutes. Process by pulsing several times until chocolate mixture is smooth. Use as is for glazing. If you wish to make a lighter frosting, allow it to come to room temperature, approximately 2 hours. Once at room temperature, place in the bowl of a stand mixer and whisk on high for 2 to 3 minutes.

Chocolate Ganache is as simple as 1,2,3. 1/4 lb. bittersweet Chocolate (melted)

1/4 c. Heavy Cream

Ganache is just a really fancy word for melted chocolate mix with cream or milk. This is a versatile sauce that can be used on tops of cakes, cookies or to dip fruit in. As easy as it is to make, it is very easy to mess up. So watch it carefully! In addition, do not add any milk or heavy cream after; chocolate will clump up due to differences in temperature.

Directions:

1. Place 8 ounces of chopped chocolate or Chocolate Chips in a glass proof bowl. Add ½ cup milk or heavy cream.

2. Place bowl in microwave. Cook at 30 second intervals, stirring occasionally.

3. When chocolate is ALMOST melted remove from microwave and stir until smooth. Do not cook until smooth, chocolate will burn.

*Chocolate must used immediately before it hardens.
