The canning and preservation of food is a science and requires information too detailed to be included here. Suggest you refer to the National Center for Home Food Preservation (NCHFP) website, it is your source for current research-based recommendations for most methods of home food preservation. They have step-by-step directions on canning and recipes for pickled beets as well as many other recipes.
You peel them, boil them, then drain the liquid when they are soft. Then, you put them with a saline solution (a salt & water brine), and seal them up in heated Mason jars (or another storage jar). You will need to release the built up air every day or two from the jars to prevent them from exploding. The beets are pickled within a week or two.
We'll give you two techniques for cooking beets and you can choose which way you like best.
Roasted Beets
Boiled Beets
Place the beets in a pot and add water to cover 2" above them. Cover with a lid.
Bring to a boil on high heat and lower heat to medium.
Boil for 30 to 45 minutes, removing smaller beets as they get done.
When they are tender enough to easily be pierced with a knife or fork, they are done.
Transfer immediately to cold water and slip off the skins.
Beets can be served raw or cooked, hot or cold, pickled, roasted, juiced, or pulverized. Shred raw beets for salads. Roasting is the simplest way to prepare cooked beets. Gently wash the beets and wrap them individually, skin on, in aluminum foil as you would a baked potato. Roast them in a 375-degree oven for an hour or so depending on their size (more time if they're bigger, less if they're smaller), until a knife glides easily in and out through the foil wrapping. Take the beetroot out of the foil and rub a paper towel against the skin. If properly roasted, the skin will slide right off. Slice with a knife or mandoline, and serve them simply with a tiny pinch of sea salt. Alternatively, you can pair beets with fruits such as Oranges, and the beet will have enough sweetness to complement the orange's acidity. Acidity also preserves the red color, which is why pickling is such a common method of preparation. The intense color of the beet is beautiful, but beet dye will bleed into other food and even stain your hands purple, so wear gloves or handle them with utensils.
Yes, you can cook beets. They are usually boiled, baked or roasted.
