How do I replace the thermostat in a 2004 1.8T jetta?
It is at the engine end of the top radiator hose.The housing is the thermostat housing and the thermostat is located therein.
Should be in a removable housing at the engine end of the upper radiator hose

Front of the engine, behind the radiator. Not for the faint of heart, or skill to replace.
If your vehicle is equipped with the 4.2ltr 6 cylinder, the thermostat and housing are replaced together, located on the side of engine block behind alternator.
If it's an automatic you will have to remove the exhaust manifold because the thermostat is located on the backside of the engine on the driver's side under the exhaust manifold.

It is located on the left side of the engine (6cyl) next to the thermostat, in order to replace both thermostat or sensor the alternator needs to be removed
