Follow the top radiator hose back to the engine block. There should be a removable housing that the hose connects to. That's the thermostat housing.
There should be 2 bolts that hold the housing in place; remove them... but not until the engine has cooled and you've drained some of the antifreeze.
Once you've removed the housing, pop out the thermostat (it's the round thing that looks like tarnished brass) and clean the mating surfaces.
Now that everything is clean and looks nice, install the NEW thermostat along with it's gasket and/or "O" ring (depending on the year of your vehicle) back into the same location from which you removed it.
Replace the housing (with the new thermostat still inside) and use A LITTLE gasket sealer, if you feel it's necessary; look for pitting on the housing, if the pitting is very serious, replace the housing, if it's minor, just use a little gasket sealer.
Once the housing is back in place, reconnect the top radiator hose and re-fill the cooling system with anti-freeze.
Start the engine and let it warm up enough to test for leaks. The job isn't done until you've verified that there are no leaks.

What you're describing sounds a lot like a sticking thermostat. They're cheap, just replace the thermostat and gasket.
That depends on the thermostat. If it's a 185 thermostat, the engine should run at 185. If it's running too hot, check the thermostat, radiator and water pump. If it's running too cold, replace the thermostat.

You can replace the thermostat on your 2010 Chevy Impala 3.5 by removing the water hose and the 3 bolts from the thermostat housing. The thermostat will come right out. Reverse the process to install the new thermostat.
