Mac OS X manages the disk in an entirely different way than Windows does. According to Apple defragmentation should never be necessary and so they do not provide a defragmentation utility.
I have used 3rd party defragmenters on Macs and although they did reduce fragmentation significantly there was no detectable effect on the computer's performance. This matches Apple's comments on the issue.
