First, you look at your cat, on its face there are two circular things most people refer to as eye balls this is a very technical term that may be hard to digest for some of us. Well once you overcome that challenge of finding the eye balls(which are ussually located near the top of the cat's face) you must then look at their eye balls and focus. Now what colors do you see? There should be three: White, Black and another one, which varies with every cat. This third color is what you can refer to as your cats eye color. How about a pat on the back. :)
