Onigiri is made by seasoning cooked short grain rice into shapes and decorating it with Nori (seaweed).

In some cases it is filled with sweet or savory fillings, everything from pickled plums to tuna.. to more unconventional western foods.

The basic steps are:

- Cook the rice

- Season rice

- Form into a shape (ball, triangle etc)

The rice used to make Onigiri is very important. In Japan "ordinary rice" would be the short grained rice that is traditionally best suited for making the sticky rice essential for the Onigiri to hold their shape.

However, this rice is not always readily available in other parts of the world where "ordinary rice" is long grained rice. Long grained rice does not lend itself to the stickiness needed to hold shape.

It is not impossible to make Onigiri with long grained rice, but it will be more difficult to shape and it should probably be stored tightly wrapped in plastic wrap to encourage the grains to stay together.

No matter what kidn you use:

- Use freshly cooked rice for the best result

- If using long grained rice, be generous with the liquid when cooking
