The thermostat on a Peugeot 307 is located on top of the engine, under the upper radiator hose. It restricts the flow of coolant based on its temperature.
The thermostat on a Peuget 206 is located on top of the engine, under the upper radiator hose. It controls the flow of coolant out of the engine.
Remove black plastic cover on left hand side of engine compartment where the washer top up is. (Push down centre of the buttons which hold it and pull up). The steering fluid filler is down below the coolant tank.
It is a plunger type switch screwed into the top of the transmission casing.
Left hand side of engine compartment. It is the cap on top of the round tank towards the back. The front one is the washer tank. It is a good idea to use antifreeze mixture so you do not dilute the stuff in the engine. DO NOT REMOVE CAP WHEN ENGINE IS HOT!!!!!
puch top of clip in and slightly to the left, it will then unclip and hinge downwards, releasing the bulb.

If you have coolant on the top of the engine it could be a leaky thermostat housing or a leaking intake gasket.
I locked my keys in a peugeot 307 once so what I did and a few mates was pulled the top part of the drivers door back far enough to get a thin metal pole in and press the central locking button on the dashboard, took 3 hours but I did eventually get back in :)
That would be the water temperature indicator. It means that your engine is overheating. Check the radiator fluid levels. If you are low, add coolant and see if the light goes out. If it does not, you may have a bad sensor. If you have been driving for a while with the light on, it may be time for some costly engine repairs.

If there is a cap on the radiator you can check to see if the radiator is full , and if it isn't , " top up " the engine coolant . Otherwise , you check the engine coolant level at the engine coolant reservoir when the engine is cold and maintain the level at the cold mark
