Ideally you need a grill with a lid. Put the coals in one half of the grill pan and the food on the rack over the empty half. Instead put a pan of water on the rack above the coals. The lid holds the heat, smoke and steam in, which cooks the meat - - this method is basically smoking. It should still be possible without the lid. Put the meat in the middle of the grill rack and the coals on either side, but not underneath - the basic idea is that you don't put the food over the coals - that would be direct heat i.e. grilling. Hope this makes sense.
When cleaning your master forge gas grill, you should place the tinfoil in a place where it will not become soiled. When cleaning your grill, it might be a good time to replace the foil.
It diffuses equally throughout the container so that the concentration of that gas is equal throughout it as long as the lid is on.

You can make a gas barbecue not burn so hot by turning it all the way as low as it will go and and if the grill is still to hot then you need to put the gas off first for the grill to cool down.
You can turn your BBQ into a smoker very easily. You just need a pan with mesquite chips and water. Put that one one side of the grill and put the food on the other. Keep the lid closed.
What i would do is put the hams on one side of the grill and turn the flame on the other side of the grill. Keep an eye on the temperature of the grill so it is not over 400 and not under 300 degrees. cook until you reach an internal temperature of 190 degrees.
