Between 195 and 210 degrees is normal. If it is hot out side and you are working it hard then it may even run 215 are so degrees and that is okay if you have plenty of ANTIFREEZE in it. But it needs to stay below 215 degrees to keep from hurting the engine.
No more then 0.060 and then it starts trying to RUN HOT on you.

If it is advanced to far, It will be hard to start when engine is hot and when it is running it will ping and rattle and could even burn a piston. The timing on that year should be set at ZERO at top dead center.

What you're describing sounds a lot like a sticking thermostat. They're cheap, just replace the thermostat and gasket.
