Cows and Cattle are together all their lives, right to the very end. They are social creatures and benefit from being among each other. It also makes it easier to handle them when they are worked together instead of separately. Unlike pigs and chickens, cattle tend to stick together when herded or moved to a different location.

As long as they want. A calf will lay down in hiding for at least a couple of hours while its mother is off grazing, and a cow will normally lay down for a half hour to an hour to rest and chew cud.

The point you need to understand is that it's not the fact of how long a calf or cow should be laying down, it's more a matter of whether they can or will get up when you get near or force them to get up. Calves will stay hidden and not get up to move even if you're just inches away from them. Cows will get up for you if they are not completely tame to you and like to maintain a specific comfort zone-distance between you and them. This is different if that cow is a complete pet and doesn't mind you coming up to her while she's laying down to rest. But not if you can slap her behind or bribe her to get up to her feet.
